Although this nigori sake retains some unfiltered fermenting mash to acquire its cloudy appearance,Sakura is designated as a ginjo for its 60% polishing rate. Habitually, nigori’s are known to be sweet with a delicate sparkle. This unique creation (from Koshinohana Shuzo brewery in Niigata prefecture) breaks the mould with a uniquely dry approach to nigori.
At its best when cold, Sakura is a treat for those who love a good wheat beer, offering a similar spectrum of flavours. A refreshing attack of freshly cut grass, nettles and lemon greet the senses.
Milky in colour, boasting rounder notes of aniseed and fennel on the mid-palate, finally adhering to a
more classical style of nigori, ultimately lingering notes of fresh cashew and earthy walnut remind us
of this unusual take on great classic sake.
